What To Look For In Sandwich/Salad Prep Tables

If you’re considering expanding your foodservice or retail business into prepared foods or are thinking of replacing an existing prep table, here are a few things to look for when purchasing…

Durability

One of the first things to consider in a prep table is construction. You’ll want a model that holds up to abuse. Stainless steel construction inside and out is the best bet. Stainless is generally stronger than aluminum and, depending on the grade, resists corrosion.           

Reliability

Keeping foods at the consistent correct temperature is, of course, a necessity. An enclosed drop-in section will ensure your perishables stay fresh. Fans force cold air into this area which flows around the pans keeping food items at the right temperature. Another feature to remember is insulated lids which help hold in cold air when the table isn’t in use.

Ability To Integrate


Foodservice workspace is typically tight and it’s helpful to have a table that can integrate into an existing counter line-up without taking up additional space. Look for a table with a front-breathing refrigeration system which allows zero-clearance installation on the sides and back. The counter can be flush with the prep table with no wasted space.

Easy Maintenance

For the most part, maintaining a prep table isn’t difficult. Apart from routine clean-up, the main thing to consider is the refrigeration system. Keeping the condenser coil clean is one of the best ways to increase your system’s lifespan. Manufacturers use different methods to simplify cleaning. One of the best is a condenser coil filter screen that helps prevent dirt and debris from collecting on the coil. The screen slides out of the back of the table (no tools needed), the operator cleans it and slides it back in place.

Additionally, look for a table with an enclosed drop-in section, as mentioned before. Because there’s a stainless steel divider between the pan and storage section, food won’t spill into the storage area beneath.

Convenience & Versatility

It’s a good idea to look for a prep table with features and options that can adapt to your needs. For example, locking adapter bars hold your pans in place so they aren’t moving around as you work. These bars can also adapt to different sized pans, so if you use a lot of lettuce, for instance, you may want to include a larger 1/3 size pan to keep from refilling as often.

For high volume usage, you may want to consider a mega top prep table which has an extra row of pans to hold more food items.

Also consider the cutting board. They take a lot of abuse, so look for a reversible board that you can get more use out of.

You can also configure your prep unit using options like overshelves and refrigerated drawers. Single or double overshelves are attached to the back of the prep table and provide extra shelf space above the table. Depending on your preference, you can replace one or more sections of your prep table with refrigerated drawers for quicker access to stored items.
